It features an ultra-sharp blade made by hand from reclaimed railroad track steel which has been heated to higher temperatures and then hammered for a thousand times. As for the handle, it’s also made by hand. To produce a lightweight and strong handle that resists water and moisture, Master Shin’s Anvil uses chestnut and oak wood that has been left to dry in the shade for years. The 100% handmade knife also features a steel band, stamping on the blade, and the signature X mark on the handle. While designed to make fish prep easy, this sashimi knife is also a great choice to slice fruit or vegetables.
