The blade you grab when trimming meat. Narrow, just a touch flexible, and curved enough to follow the line of a joint without hacking away good flesh.
KNIndustrie worked with Coltelleria Berti to make it from a single piece of stainless steel, finished with a soft frost. The squared bolster sits like a thumb stop; the handle keeps light in hand, almost delicate.
It’s close to six inches long and a bit under 10 oz. Enough heft to stay steady, not so much that it slows you down. Ideal for chicken, fish, or breaking down a roast.
Made by hand in Italy. Best washed in warm water and dried straight after. Technically dishwasher safe, though most cooks won’t risk it.
