Description

“Eat More Plants. A Chef’s Journal” by Daniel Humm is an evocative collection that chronicles the transformative journey of Eleven Madison Park, his three-Michelin-Star restaurant, into a wholly plant-based culinary destination in 2021. This book is not just a compilation of recipes; it’s an intimate glimpse into Humm’s creative process, shaped by the rhythms of the seasons – spring, summer, fall, and winter. Through spontaneous and painterly drawings of fruits and vegetables, ranging from the familiar carrot to the exotic matsutake mushroom, Humm celebrates the rich diversity of plant-based ingredients. Accompanied by handwritten notes, the book delves into the ideas, convictions, and uncertainties that guided his decision to reinvent the renowned restaurant. It offers a window into the chef’s thoughts and struggles, reflecting on societal norms, culinary possibilities, and the fear and excitement of charting a new course. This journal stands as a testament to Humm’s commitment to pro-planet values and the realization that breaking free from traditions was his most significant liberation.
